Vintage Notes:
The 2019 Oregon harvest was more like a classic Oregon Harvest with cool temperature in the fall and several rain showers The resulting wines have great balance, gorgeous aromatics, nice acid and low alcohol. They are definitely age-worthy wines. – Mo Ayoub, winemaker
Vineyard:
The Ayoub Vineyard in Dundee Hills.
Aging:
The grapes are selected from specific blocks in the Ayoub Estate vineyard, and the fermentation is done 100% whole cluster with minimal intervention. The wine is aged for a year in 25% new and 75% older French oak barrels. The Ayoub ¡Salud! Cuvée is a blend of the best barrels from the whole cluster lot.
Winemaking:
Ayoub winemaking reflects a combination of tradition and innovation. Ever evolving, like the wines, Mo’s winemaking approach includes experimentation with a commitment to bottling only the most successful, elegant lots among the barrels. In the winery, all wines are fermented in small lots to provide better control over the fermentation process. The goal is to produce wines that showcase the vineyard’s distinct terroir, wines that have great balance and structure, silky with complex flavor profile, and age-worthy. The consistency of Ayoub wines results from a continuous learning mindset in which there is no temptation toward quantity, and every intent to thrill loyal supporters with each vintage.
