Wine Notes:
Elk Cove was one of the first Oregon wineries to make a Brut Sparkling Wine in 1996, and in 2017 the Campbell family expanded their sparkling program to include three distinctive expressions of Oregon Méthode Traditionelle, single-vineyard Sparkling wines:
- Four bottles of Elk Cove Vineyards Blanc de Blancs (Goodrich Vineyard): 100% Chardonnay, linear with bright, citrus flavors, this wine is cool-fermented in steel tanks using a traditional Champagne yeast to retain the bright freshness of a traditional Blanc de Blancs. Residual sugar 2.4 g/L
- Four bottles of Elk Cove Vineyards Brut Rosé (La Bohѐme Vineyard): 100% Pinot Noir Brut Rosé is fermented in steel tanks to retain its fruit-forward aromatics. Residual sugar 3.6 g/L.
- Four bottles of Elk Cove Vineyards Brut (Mount Richmond Vineyard): A traditional blend of Chardonnay (34%) and Pinot Noir (66%) cool-fermented in neutral French oak puncheons for richness using a traditional Champagne yeast. We put 40% of this wine through malolactic fermentation to lessen acidity and lend a creamy texture to the wine. Residual sugar 2.1 g/L.
After three early harvests in a row, 2017 brought us back to what many consider “classic Oregon weather.” This cooler vintage gave us fantastic hang-time and the bright fruit character we love in cool-climate sparkling wines.
Winemaking Philosophy:
High quality wine really starts in the vineyard. The time I spend stomping through our 350 acres of vines not only helps us make good decisions in viticulture, it also informs our winemaking decisions.
