The ’25 vintage of the ¡Salud! Cuvée blend once again comes entirely from our Paloma Estate Vineyard, high up in the Laurelwood District of the Chehalem Mountains. Comprised of over two dozen clones of Pinot Noir, this vineyard produces wines of unmatched complexity, intensity and balance. The season was near perfection and practically demanded using a large percentage of whole cluster (80%) be used in the fermentation. The nose opens with concentrated ripe raspberry and moves into darker fruited blueberry and blackberry accented by coffee, cocoa, floral perfume, clove, and baking spice. Bright, balanced acidity frames a juicy palate of dark fruit, chocolate/mocha, earthy, black tea, and subtle wood spice. The resulting wine bears the classic power of whole cluster and the perfect silkiness of truly ripe tannins. A powerful classic Oregon Pinot Noir!
